In a fit of desperation, I tweeted asking for *simple*, *easy*, cheap recipes. This is what I got in return. I’m totally posting this so it’s really easy to print them.
One easy thing I do is cut up an onion, garlic & potatoes, when they're cooked through in a pan, add spinach until wilted, then some cottage cheese at the end. You can add bacon, or scramble some egg with the other stuff for more protein. All in one pan, so little cleaning too 🙂

An easy pasta sauce mix is equal mix of pesto+yoghurt (or sour cream or creme fresh). You can just drop a dollop of both on hot fresh pasta and stir it in. Add in some spinach or watercress for a bit of extra iron and texture.

Get some ready chopped onions, fry, add garlic, fry for just a bit, add tomato pasata or pasta sauce, add a sprinkle of herbs/pepper, simmer for a while, add protein (meat/fish/tofu/whatever), add pasta. Can be cooked in bulk and frozen for reheating.

Jacket potato: rub with oil and salt, cook in an oven on 180c for about 90 minutes or until a knife easily goes through it. Cut it open and add butter/sour cream/tuna/chili con carne/baked beans. Can also be microwaved, 10 minutes, then 20 mins in oven to give it a crisp coat.

I actually pretty much live on those three recipes, because I am quite lazy. I also tend to buy fresh ready chopped vegetables when I can and either steam or boil them with a pinch of salt.

Orzo + vegetable stock, + tomatoes + chopped onion = relatively low spoon dinner that makes multiple portions! It's my go to when I don't want to cook anything else, bonus it's vegan! I'll send the recipe when I get home x

A real treat for me is pesto roasted vegetables. Roughly chop onions and red peppers, then rub all over with pesto. Cook for about 30 minutes at about 180 degrees or until it looks delicious. I also tend to cook chicken breasts on top, but those are quite expensive.

Get some basic chilli con carne, bolognaise and beef stew recipes. Posh stock cube the secret ingredient. Cook in bulk and freeze the extras. Consider the purchase of a slow cooker to further reduce hassle 🙂

Baking dish, dump in onions, cauliflower, peppers courgettes chopped into inch size pieces. Seasoning, olive oil, hot sauce. Stir. Sit sausages/salmon fillets/chicken thighs/ halloumi on top. Stick in a pre heated oven at a high temp for like 25 mins

Even easier, simple things like flat bread pizzas… Sauce, jam pack lots of veg, light ammt of cheese and meat to keep it decently healthy… Put it in the oven on broil with the door open a crack for 10 to 15 min or until the cheese gets brown
